Carbohydrates are organic components of various elements that provide a continuous supply of energy in the form of glucose (sugar) to trillions of body cells. Simple carbohydrates (monosaccharides and disaccharides) come in concentrated forms—as in refined sugar, which is made from cane or beet sugar, molasses, and honey—and natural forms—as in the sugars in some fruits, vegetables, and grains. Complex carbohydrates (polysaccharides) are chains of sugar molecules found in fruits, vegetables, and grains. Carbohydrates are broken down into six simple carbon-sugar molecules to permit absorption into the bloodstream. After food is eaten, the blood-sugar level is elevated, and there is an increase in the amount of glucose transported to the cells. Excess sugar is converted to glycogen and stored for future use in the liver and muscles. Once maximum storage capacity is reached, excess sugars are converted to body fat and stored in adipose (fat) cells.
