Protein, from the Greek word proteios, or primary, is critical to all living things. In the human body, it is used to repair, rebuild, and replace cells; aid in growth; balance fluid, salt, and acid-base; and provide needed energy when carbohydrates and fats are insufficient or unavailable. Protein is produced in the body through building blocks called amino acids. Some of these amino acids are produced in the body; others are derived only from food sources. Nonessential amino acids can be manufactured by the body if not obtained from the diet. Essential amino acids, 8 to 10 of which must be present in the body in the proper amount and proportion to the nonessential acids for normal protein metabolism to proceed, cannot be manufactured by the body and must be acquired through diet. All 22 amino acids must be present simultaneously (within several hours) in order for the body to synthesize them into proteins that will be used for optimal maintenance of body growth and function.
Humans obtain protein from both animal and plant foods. In general, animal protein is superior to plant protein because it contains all the essential amino acids in the proper proportions. If one essential amino acid is missing or present in the incorrect proportion, protein construction may be blocked.
Eggs are the complete protein by which all other protein is judged. Milk, cheese, other dairy products, meat, fish, and poultry compare favorably with eggs as excellent sources of protein. Although eggs contain about 213 milligrams (mg) of cholesterol and 5 g of fat (60 percent), they are a low-calorie (75-kcal) source of protein, vitamin A, riboflavin, vitamin B12, iron, zinc, phosphorus, calcium, potassium, and other nutrients. It is still advisable to consume no more than two to three eggs per week, never more than one per day, to eliminate or substitute other food products in recipes calling for eggs as an ingredient, and to purchase small eggs rather than medium, large, or extra large. The American Heart Association guideline of no more than 300 mg of cholesterol per day is difficult to follow if you start the day with an egg rather than with cold or hot cereal.
