THE ENERGY NUTRIENTS: FATS
Fat is a critical nutrient that provides a tremendous source of energy to the human body. Fat also stores and transports vitamins A, D, E, and K; carries linole-ic acid (an essential fatty acid); increases the flavor and palatability of foods; provides sustained relief from hunger; and helps to keep protein from being used as energy. The fatty tissue in our bodies supports organs, cushions them from injury, and aids in the prevention of heat loss. Fat is in most body tissue, with bone marrow containing 96 percent, liver 2.5 percent, and blood 0.5 percent. Unfortunately, too much body fat and high blood-fat levels can shorten life and increase vulnerability to numerous chronic and degenerative diseases, such as cardiorespiratory disease and cancer.
The fat in food is classified as saturated, polyunsaturated, and monounsaturated. Cholesterol is used in the synthesis of sex hormones, vitamin D, and bile salts. It is also associated with artery clogging and heart disease (see chapter 12). Cholesterol is a nonessential nutrient. Blood levels depend on the cholesterol consumed in your diet and that produced by the liver (see Table 10.3). The intake of saturated fat stimulates the liver to produce more cholesterol.
The average person in the United States consumes over 55 lb of visible fat and over 130 lb of invisible fat each year. Dietary fat contributes approximately 36 to 38 percent of the total calories, although the recent favorable pattern of fat intake shows that more fat is being consumed from plants and less from animal sources. Since saturated fat intake stimulates the production of cholesterol, it is important to reduce cholesterol intake to less than 300 milligrams daily and total saturated fat to less than 10 percent of daily calories. Both dietary saturated fat and cholesterol contribute to elevated blood-cholesterol levels.
