THE ENERGY NUTRIENTS: FATS - THE FIVE KINDS OF FOODS CONTAINING THE HIGHEST PERCENTAGE OF KILOCALORIES
The five kinds of foods containing the highest percentage of kilocalories from fat are hamburgers and meat loaf (63 percent); hot dogs, ham, and luncheon meats (58 percent); whole milk (54 percent); doughnuts, cakes, and cookies (54 percent); and beefsteak and roasts (50 percent). Another major source of saturated fat in our diet is the food eaten in fast-food restaurants. Most hamburgers, hot dogs, and chicken and fish sandwiches served by major fast-food chains contain more than 50 percent fat and are very high in calories. Even McDonald's McLean Deluxe Sandwich (taken off the menu due to poor sales) contained 320 calories and 10 g of fat (90 kcal) for a total of 28 percent fat. Other popular sandwiches and their percentage of calories from fat include: McDonald's Filet-O-Fish (440 calories, 53 percent fat), Burger King's Broiler Chicken Sandwich (379 calories, 42 percent fat), Burger King's Double Whopper with Cheese (935 calories, 59 percent fat), Wendy's Grilled Chicken Sandwich (340 calories, 34 percent fat), Wendy's Big Classic (570 calories, 52 percent fat), Kentucky Fried Chicken's Lite 'n Crispy Drumsticks (242 calories, 52 percent fat), and Kentucky Fried Chicken's Chicken Sandwich (482 calories, 50 percent fat).
The search for a fat substitute, or artificial fat, that provides the same taste and texture with about one fourth the calories and none of the disadvantages of dietary fat continues. After spending more than $200 million, Proctor and Gamble introduced olestra as a fat substitute in several products in the United States. Olestra is a synthetic compound of sugar and vegetable oil that tends to scoop up the fat-soluble vitamins A, D, E, and K, as well as nutrients such as carotenoids found in fruits and vegetables, potentially causing deficiencies. Its use has also been shown to cause gastrointestinal problems such as cramps and severe diarrhea in some individuals. Taste tests on potato chips, ice cream, and other products with artificial fats have been encouraging. It is apparent that the public wants the best of both worlds (the taste of fat without the calories) and is ready to purchase FDA-approved products with artificial fat, providing the risks are minimal. In November 1995, an FDA panel of experts concluded that olestra chips were not harmful. It is anticipated that numerous products in the future will contain this artificial fat. The debate will continue, however, on whether the benefits of reduced calories, saturated fat, and total fat outweigh the absorption and side-effect problems.
